What’s more, they make for a yummy side dish for a full-on family feast, so everyone can enjoy them — not just the little one!
Orange-fleshed spuds have got over 400% of the RDA for vitamin A in one medium potato, as well as loads of fibre and potassium.
Change up the recipe with butternut for an equally healthful, bright and tasty option. Dress it up with Parmesan and paprika, or keep it mild with a sprinkling of cinnamon ‘n’ salt.
Ingredients (for 4-6 servings):
3 medium sweet potatoes, cut into thin strips
2-3 tsp rapeseed oil
Seasonings of choice
1. Preheat oven to 180 C.
2. Line a baking sheet with parchment paper.
3. Place cut sweet potatoes in a large bowl of cold water and give it a swirl. Dry on paper towelling or clean dish cloth thoroughly.
4. Toss with oil and chosen seasonings.
5. Bake for 25-35 minutes or until fries are lightly browned and crisp. Give the fries a stir halfway through baking time to allow for even cooking.
6. Serve immediately.
