Pumpkin Spice Rice Krispie Treats!!

This recipe combines the three things that make me most happy during the month of October: Halloween-themed deliciousness, copious amounts of sugar, and culinary laziness. (Obviously, the latter two are year-round prerequisites to keep me smiling.)

Pumpkin Spice Rice Krispie Treats!!

Kids and grown-up kids can never get enough of Rice Krispie treats — and this pumpkin twist on the classic version will be no exception. Plus, it takes just 10 minutes to whip up, and even less time to devour.

Ingredients:

3 tbs butter
1 tsp vanilla essence
4 cups mini marshmallows
6 cups Rice Krispie cereal
½ tsp. cinnamon
½ tsp. pumpkin pie spice (or simply use a mix of powdered ginger, nutmeg and allspice)
1/8 cup pumpkin puree

Directions:

Step 1. Plop your butter into a large pan on medium low heat and let it melt.

Step 2. Add your marshmallows and vanilla essence. The traditional recipe calls for around 5 1/2 cups marshmallows {the little ones}, but since you will be adding pumpkin, you want to reduce the overall goo so your treats aren’t too wet.

Step 3. When your marshmallows have melted, add your pumpkin and spices and stir. Add more or less of your spice mix to taste.

TIP: Allow your marshmallow mixture to cool for 10-20 minutes or so (use your judgement) before adding the cereal. This should help reduce any excess moisture.

Step 4. Toss in your Rice Krispies and stir.

Step 5. Pour your treat mix into a 9×13 baking pan that has been greased, preferably with a little melted butter.  Using wax paper, flatten out your treats.

Step 6. Wait a few minutes – this will call for a monumental amount of willpower – for everything to cool, then share. Or wickedly stuff your own face in secret.
