Whilst it is important that your little ones have a healthy balanced diet, finding dishes that they will actually eat can prove difficult. Generally speaking babies and toddlers enjoy a Sunday dinner, which is bursting with nutrients and goodness.
Although the following recipe for Sunday chicken dinner for babies and toddlers does not have to be constrained to a Sunday and can be enjoyed by your youngster any day of the week.
65g of cooked chicken breast
½ chicken stock cube
40g of frozen peas
130g of new potatoes
1 small carrot
1 small parsnip
70g of swede
Dissolve the chicken stock cube into 250ml of water and bring to boil. Peel the vegetables and chop them into small cubes. Place the veg into the boiling stock water, cover and simmer for ten minutes. Add the frozen peas and bring the pan back to boil before simmering for a further five minutes. Drain the vegetables and retain the stock water.
Chop the cooked chicken into small pieces and place it into a blender with the vegetables. Blend until the mixture is a smooth, lump free paste. Add 45ml of the stock water to the mixture and blend until it forms a smooth puree that falls easily from a spoon.
Serve it to your baby or toddler at room temperature.
You can vary the taste of your little one’s Sunday lunch by varying the meat and vegetables. You could try beef or lamb one week instead of chicken or swap the swede for new potatoes.
To save yourself money, hassle and time, it is advisable to make a large amount of any one dish for a baby and freeze it.
